Hi,
I have developed a likeing for the cooked beans and also Nyebay (sp?)that is available everywhere in The Gambia, would any of the good cook who visits bantaba in cyberspace reply to this posting with their favorite recipe for these dishes and also the common English name for the beans used ? to make them,if you don't know please ask your wife or wives for the information, on my last trip I discovered a very small local restraunt where these foods were served in a fresh tapalapa with mayonese and a dash of pepper sauce wrapped in newspaper from Sweden excellent with a glass of Nescafe and milk, can't really get on with cafe touba
thanks.

Toubab, was it with palm oil sauce? I think the common English name is "Black eye beans".

Momodou,I could not detect any sauce the beans were complete and unmashed but in a mass close together and appeared to be red, could that be the effect of palm oil? Eve hasnt posted her recipe yet so I cannot tell, like all well known dishes in a country there are probably many local variations. All delicious but like all foods there are some who can produce better flavours than others by adding their own secret ingredients
